Knife Pleat is in the old location for Marche Moderne in South Coast Plaza. They just got a Michelin star, so we decided to take Karyn as a special treat for her birthday.
Our menu for tonight, with the wine pairings on the right.
An amuse bouche of chestnut soup with creme fraiche and white truffles shaved on top.
The crudo course with beets, cranberries, and pomegranate-sake granite.
The Fall vegetable macedoine, a lovely collection of sweet potato, persimmon, and butternut squash on a bed of parsnip puree. Amazingly delicious for a "salad" course.
The highlight of the evening: ricotta gnudi pillows with chantarelle and porcini mushrooms and black winter truffle sauce.
The lobster course with hearts of palm, mango, butternut squash, and "jus de press".
The main course, a trio of pork loin, pork tenderloin wrapped in chard, and a braised pork belly. Served with a poached apple and cabbage slaw.
The dessert course: a lovely combination of flavors and textures, including a chocolate base, chestnut ice cream, various fruit compotes, hard meringue, crispy bits. Every bite was different.
